Scallops are a great choice because they’re available all year round for you to enjoy. Our favourite way to cook scallops – this recipe is delicious! Great with a good salad or spring greens and new potatoes, or stirred through some pasta!
12 Latimer’s Scallops
5oz. bacon cut in small pieces
1/4 pt. double cream
1) Fry the bacon in a little butter until fairly crisp. Remove from the pan.
2) Fry the scallops in the bacon fat for about 2 minutes on each side, until white.
3) Add the bacon and then a little cream if liked to form a sauce and serve.
