Lemon Sole

soften button mushrooms and onions in butter in a ovenproof pan, then put fillet of lemon sole on top with a dash of white wine, bake in hot oven for 5-7minutes, until fish has turned opaque, remove from pan, add a dash of cream, parsley and seasoning to the pan and reduce into a sauce. Serve with green salad and new potatoes.
