Swordfish with Lemon, Garlic, and Olive Oil Marinade
Serves 6
Ingredients:
6 Swordfish fillets
Marinade ingredients:
4 Lemons, zested and juiced
1 Tsp of dried Greek oregano
2 Garlic cloves, finely chopped
60 ml of Olive oil
Method:
- Combine the juice and zest of the lemons with the oregano, garlic cloves, and olive oil in a large bowl
- Reserve 1/4 cup for basting the Swordfish during cooking
- Add the Swordfish to the remaining marinade, cover and refrigerate for 1 hour before barbecuing
- Heat the BBQ to medium heat and put the Swordfish on
- Once the flames have died down, cook for 3-4 minutes on each side
- Make sure the Swordfish is hot in the middle before serving
- Serve with lemon wedges (or anything you want!)
