Baja Fish Tacos

Recipe

Tortilla:

250g plain flour⠀

2tbsp vegetable oil⠀

150ml warm water⠀

1/2 tsp salt⠀

  1. Combine all ingredients in a bowl, knead the dough to bring it together. Add more water or flour if needed until the dough is combined into a ball. Leave in a floured bowl and cover with a tea towel for 15-30mins.⠀
  2. Divide dough into 6-8 equal pieces and roll out to desired size, around 1.5-2mm thickness.⠀
  3. Get a non stick frying pan on high heat and toast the tortillas for around 2mins each side.⠀

Guacamole:

2 avocados smashed⠀

Juice of 1 lime⠀

3 spring onions finely chopped⠀

5 small cherry tomatoes diced⠀

Handful of fresh coriander finely chopped⠀

Chipotle chilli flakes⠀

  1. Combine all ingredients in a bowl and top with more fresh coriander and chipotle chilli flakes (these give it a smokey taste) but can use normal chilli flakes or add a green chilli or 2.

Baja style seasoning for fish:⠀

1 tbsp ground cumin⠀

1 tbsp smoked paprika⠀

1 tsp garlic powder⠀

1 tsp chilli powder⠀

Juice of 1 lime⠀

Pinch of chipotle chilli flakes ⠀

Salt and pepper⠀

  1. Marinade the fish, I used sea trout, monkfish and tuna steak. Monkfish and tuna cook around 2-3 mins max each side, the seatrout around 6mins flesh side down then 2 mins skin side down. Slice and add to tacos.⠀

Chipotle Mayo:

5 parts mayo ⠀

1 part chipotle paste⠀

 

Tacos:

Add slaw, guac, fish then top with slice radishes, ribbons of cucumber, fresh coriander, chipotle mayo and fresh lime juice… enjoy⠀
