Fish Jackets #EasyFishy
These are basically a take on a fish pie but super quick, easy and very tasty!!
Serves 2
2 baking potatoes
250 g of Latimers fish pie mix
200 g of cooked prawns
Dessert spoon of mustard (we use whole grain)
100 g of grated extra mature cheddar cheese (more won’t hurt)
150 mL of crème fraiche
4 spring onions
Method
Bake potatoes until soft (about an hour)
Meanwhile
Chop fish pie mix into small pieces and add to a saucepan
Add prawns to saucepan
Add crème fraiche to saucepan
Add mustard to saucepan
Heat for 3 minutes
When potatoes are cooked, scoop out flesh and place in a large mixing bowl. Add cheese, chopped spring onions (butter also here but not essential) and mix together.
In the jacket shells, place a layer of the fish/prawn mixture (use a slotted spoon).
The cooking liquor from the saucepan can be added to the potato mixture at this point if it needs loosening.
Top the fish with potato mixture and return to the oven for around 20 minutes
Serve with salad
