Fresh Live Mussels (approx 400g per adult)
Garlic – finely chopped
Onion – finely chopped
Soften Onion and garlic in a pan with a little butter or oil, once soft add cream and turn heat off
Sort the mussels – remove “beards” and discard any mussels which are open BEFORE cooking
Get a big pan really hot, pop in the mussels and a good glug of the white wine, put the lid on
After 2-3 mins on high heat, check to see if the mussels have opened their shells, if not give them another minute or so
Pour sauce over the mussels, sprinkle parsley on top
Discard any mussels which are still closed AFTER cooking.
Eat up straight away – lovely with “frites” (chips) or crusty bread
